Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the melted butter with the mashed bananas until well combined.
  3. Stir in the sugar, beaten egg, and vanilla extract until smooth.
  4. Sprinkle the baking soda and salt over the mixture, then add the cinnamon and nutmeg. Stir to combine.
  5. Gradually fold in the flour until just incorporated. Do not overmix.
  6. If using, gently fold in the dark chocolate chips.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
