Ingredients:

  • 6 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup (optional)
  • 2 cups mixed seasonal fruits (such as blueberries, strawberries, and bananas)
  • 1 cup cubed whole-grain bread
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or oil for greasing the baking dish

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or oil.
  2. In a large bowl, whisk together the eggs, milk, vanilla extract, maple syrup (if using), cinnamon, and salt until well combined.
