Ingredients:

  • 9 lasagna noodles
  • 4 large eggs
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 ripe mango, peeled and diced
  • 1 tablespoon honey (adjust for sweetness)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon turmeric (for color)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a bowl, whisk together the eggs, ricotta cheese, salt, pepper, and turmeric until well combined.
  4. In a small saucepan, combine the diced mango, honey, and lime juice over medium heat. Cook for about 5 minutes until the mango softens slightly and the sauce thickens. Remove from heat.
  5. In a greased baking dish, layer 3 lasagna noodles at the bottom. Spread half of the egg mixture over the noodles, followed by a third of the mango sauce. Sprinkle with a third of the mozzarella cheese.
  6. Repeat the layering process with another 3 noodles, the remaining egg mixture, another third of the mango sauce, and half of the remaining mozzarella cheese.
  7. Top with the final 3 noodles, the last of the mango sauce, and the remaining mozzarella cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before slicing. Garnish with fresh cilantro before serving.
