Ingredients:

  • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 cup grated mozzarella cheese
  • 1 ripe mango, peeled and sliced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon lime juice

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix the ricotta cheese, eggs, salt, pepper, and half of the basil until well combined.
  4. In a baking dish, spread a thin layer of the ricotta mixture on the bottom. Layer three lasagna noodles over the mixture.
  5. Spread half of the remaining ricotta mixture over the noodles, followed by half of the mango slices. Sprinkle with a third of the mozzarella and a tablespoon of Parmesan.
  6. Repeat the layering with another three noodles, the rest of the ricotta mixture, the remaining mango slices, and another third of the mozzarella.
  7. Top with the last three noodles, the remaining mozzarella, and Parmesan cheese.
  8. In a small bowl, mix the olive oil, honey, and lime juice. Drizzle over the top layer.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
  10. Let cool for a few minutes before slicing. Garnish with the remaining fresh basil before serving.
