Ingredients:

  • 1 package of wonton wrappers
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup finely chopped bell peppers
  • 1/4 cup finely chopped green onions
  • 1/4 cup cooked and crumbled bacon or sausage (optional)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Chili sauce for dipping (optional)

Instructions:

  1. In a skillet, heat a little oil over medium heat and sauté the bell peppers and green onions until soft.
  2. In a bowl, whisk the eggs with soy sauce, salt, and pepper. Pour the eggs into the skillet and scramble until just set. Remove from heat and let cool slightly.
  3. Mix in the shredded cheese and, if using, the crumbled bacon or sausage.
  4. Lay a wonton wrapper on a clean surface. Place about 1 tablespoon of the egg mixture in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Repeat with remaining wrappers and filling.
  5. In a deep pan, heat vegetable oil over medium-high heat. Fry the wontons in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
  6. Serve warm with chili sauce for dipping, if desired.
