Ingredients:

  • 4 large russet potatoes, cut into fries
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • 1/2 cup teriyaki sauce
  • 4 large eggs
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cut fries in a bowl with vegetable oil and a pinch of salt. Spread them out on a baking sheet in a single layer.
  3. Bake the fries for 25-30 minutes, flipping halfway through, until golden and crispy.
  4. While the fries are baking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and fry to your desired doneness.
  5. In a small saucepan, gently heat the teriyaki sauce until warm.
