Ingredients:

  • 2 cups sweet corn (fresh, frozen, or canned)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions:

  1. In a large mixing bowl, combine the cream cheese, sour cream, and mayonnaise until smooth.
  2. Add the sweet corn, cotija cheese, cilantro, lime juice, chili powder, garlic powder, and cayenne pepper (if using).
