Ingredients:

  • 2 filet mignon steaks (6-8 oz each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon lemon juice
  • Optional: fresh lemon wedges for serving

Instructions:

  1. Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, and lemon juice. Mix well and set aside.
  4. Season both sides of the filet mignon generously with salt and black pepper.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the steaks and sear for 3-4 minutes on each side until a nice crust forms.
  6. Once seared, transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until desired doneness is reached.
  7. Remove the skillet from the oven and place the steaks on a plate. Top each steak with a generous dollop of the garlic herb butter and let rest for 5 minutes before serving.
  8. Serve with fresh lemon wedges on the side for an extra burst of flavor.
