Ingredients:

  • 2 filet mignon steaks
  • 2 ears of corn, husked
  • 1 cup refried beans
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 teaspoon cayenne pepper
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat your grill or stovetop skillet over medium-high heat.
  2. Season the filet mignon steaks generously with salt and pepper.
  3. Cook the steaks for 4-5 minutes on each side for medium-rare, or to your desired doneness. Let rest for 5 minutes before slicing.
  4. While the steaks are resting, grill the corn on the cob until charred, about 8-10 minutes, turning occasionally.
  5. In a small bowl, mix together the mayonnaise, cotija cheese, cayenne pepper, and lime juice to create a spicy crema.
  6. Once the corn is grilled, cut the kernels off the cob and mix with the spicy crema. Adjust seasoning with salt and pepper if needed.
  7. In a small saucepan, warm the refried beans over low heat until heated through.
