Ingredients:

  • 400g frozen fish fingers
  • 500g frozen fries
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 400g canned diced tomatoes
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions:

  1. Preheat the oven and bake the frozen fries according to package instructions until crispy.
  2. While the fries are baking, heat vegetable oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the curry powder, ground cumin, and turmeric, cooking for about 30 seconds to release the spices' flavors.
  5. Add the canned diced tomatoes and coconut milk to the pan, stirring to combine. Season with salt and pepper, then let the sauce simmer for 10-15 minutes until thickened.
  6. Once the fries are done, remove them from the oven and place them on a serving platter.
  7. Top the fries with the baked fish fingers, then generously spoon the curry sauce over the top.
  8. Garnish with fresh cilantro and serve with lime wedges on the side.
