Ingredients:

  • 400g frozen fish fingers
  • 500g frozen fries
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 can (400g) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat the oven and prepare the fries according to package instructions until golden and crispy.
  2. While the fries are baking, heat the vegetable oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and ginger, cooking for another minute until fragrant.
  4. Stir in the curry powder and cook for 30 seconds, then pour in the coconut milk, soy sauce, and lime juice. Simmer for 5-7 minutes until the sauce thickens slightly.
  5. Season the curry sauce with salt and pepper to taste.
  6. Once the fries are done, remove them from the oven and place them on a serving platter.
  7. Arrange the cooked fish fingers on top of the fries, then generously drizzle the curry sauce over the entire dish.
  8. Garnish with fresh cilantro and serve immediately.
