Fish Tacos with Mango Salsa

Ingredients:

  • 1 lb white fish fillets (such as tilapia or cod)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and diced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • Lime wedges for serving

Instructions:

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a small bowl, mix the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Brush this mixture over both sides of the fish fillets.
  3. Grill the fish for about 3-4 minutes on each side, or until cooked through and flaky. Remove from the grill and let it rest for a couple of minutes before flaking it into large pieces.
  4. In a separate bowl, combine the diced mango, red onion, jalapeño, lime juice, and cilantro to make the mango salsa. Season with salt to taste.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.
  6. Assemble the tacos by placing a portion of grilled fish on each tortilla, topping it with mango salsa, and adding avocado slices if desired.
  7. Serve with lime wedges on the side.
