Ingredients:

  • 1 cup red kidney beans, soaked overnight
  • 4 cups water
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt to taste
  • 1 tablespoon vegetable oil
  • Chopped cilantro for garnish

Instructions:

  1. 1. Drain and rinse the soaked red kidney beans.
  2. 2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3. Add the minced garlic and ground cumin, stirring for another minute until fragrant.
  4. 4. Add the soaked beans, water, bay leaf, and salt to the pot. Bring to a boil.
  5. 5. Reduce the heat to low, cover, and let simmer for about 45 minutes, or until the beans are tender.
  6. 6. Remove the bay leaf and adjust seasoning if necessary.
  7. 7. Serve hot, garnished with chopped cilantro.
