Ingredients:

  • 2 slices of whole grain bread
  • 1/2 cup roasted red bell peppers
  • 1/2 cup zucchini, sliced and roasted
  • 1/2 cup eggplant, roasted
  • 1/4 cup hummus
  • 1 tablespoon balsamic glaze
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh arugula or spinach leaves

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchini and eggplant, and place them on a baking sheet with the red bell peppers. Drizzle with olive oil and season with salt, pepper, garlic powder, and smoked paprika.
  3. Roast the vegetables in the oven for about 20-25 minutes, or until tender and slightly caramelized.
  4. Spread a generous layer of hummus on one slice of whole grain bread.
  5. Layer the roasted vegetables on top of the hummus, followed by a drizzle of balsamic glaze.
  6. Top with fresh arugula or spinach leaves.
  7. Cover with the second slice of bread and press down gently.
  8. Slice the sandwich in half and serve immediately.
