Ingredients:

  • 8 oz pasta (penne or rigatoni)
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/2 cup breadcrumbs
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Add the cooked pasta to the skillet along with the chopped basil, salt, black pepper, and red pepper flakes. Toss to combine.
  5. In a separate bowl, mix together the mozzarella and Parmesan cheeses. Add half of the cheese mixture to the pasta and stir until well combined.
  6. Transfer the pasta mixture to a greased baking dish. Top with the remaining cheese mixture.
  7. In a small bowl, combine the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture evenly over the cheese layer.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
