Ingredients:

  • 1 lb ground chicken
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (or almond flour for a gluten-free option)
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 4 tablespoons unsalted butter
  • 1 head cauliflower, riced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, beaten egg, oregano, salt, pepper, and parsley. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes or until cooked through and golden brown.
