Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup milk (or dairy-free alternative)
  • 1 tablespoon maple syrup (optional)
  • Chopped parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Season the chicken breasts with thyme, paprika, salt, and pepper. Add to the skillet and cook for 5-6 minutes on each side until golden brown.
  4. Transfer the chicken to a baking dish and bake in the oven for 15-20 minutes or until cooked through.
  5. Meanwhile, boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add milk and maple syrup (if using), then mash until smooth and creamy. Season with salt and pepper to taste.
  7. Once the chicken is done, let it rest for a few minutes before slicing.
  8. Serve the sliced chicken on a bed of sweet potato mash, drizzled with the garlic butter from the skillet, and garnish with chopped parsley.
