Ingredients:

  • 1 pound beef sirloin, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 1 pound rigatoni pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions:

  1. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the steak tips and season with salt and pepper. Sear until browned and cooked to your desired doneness, about 3-5 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.
  3. Return the steak tips to the skillet and toss to coat in the garlic butter. Add fresh thyme and adjust seasoning if necessary. Keep warm.
  4. Meanwhile, cook the rigatoni according to package instructions until al dente. Drain and return to the pot.
  5. In a separate saucepan, heat the heavy cream over medium heat. Stir in the Parmesan cheese until melted and smooth. Add the mozzarella cheese and stir until melted and creamy.
  6. Pour the cheese sauce over the rigatoni and mix well to combine.
  7. Serve the cheesy rigatoni on plates topped with the garlic butter steak tips. Garnish with chopped parsley.
