Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups broccoli florets
  • 1 pound baby potatoes, halved
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with olive oil, paprika, salt, and pepper. Spread them out on one side of a baking sheet.
  3. In the same bowl, combine the chicken thighs with minced garlic, salt, and pepper. Place them skin-side up on the other side of the baking sheet.
  4. Bake in the preheated oven for 25 minutes.
  5. After 25 minutes, add the broccoli florets to the baking sheet. Drizzle with a little olive oil and season with salt and pepper.
  6. Return the baking sheet to the oven and bake for an additional 15 minutes, until the chicken is cooked through and the potatoes are tender.
  7. Sprinkle the shredded cheese over the chicken thighs and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with fresh parsley, and serve hot.
