Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 8 cups fresh spinach
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)

Instructions:

  1. In a bowl, combine minced garlic, rosemary, thyme, salt, pepper, and olive oil to create a marinade.
  2. Add chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator.
  3. Preheat the oven to 400°F (200°C).
  4. Place the marinated chicken thighs, skin-side up, on a baking sheet and roast for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  5. While the chicken is roasting, heat a large skillet over medium heat and add a splash of olive oil.
  6. Add the fresh spinach to the skillet and sauté until wilted, about 3-4 minutes. Stir in the lemon juice and red pepper flakes if using. Season with salt and pepper to taste.
  7. Serve the roasted chicken thighs on a plate alongside the sautéed spinach.
