Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt and pepper.
  2. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown. Flip and cook for an additional 5-7 minutes until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced onions and cook over medium heat, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.
  4. Add the minced garlic to the onions and cook for another 2-3 minutes until fragrant.
  5. Stir in the balsamic vinegar, thyme, and rosemary, mixing well to combine. Return the chicken thighs to the skillet, nestling them into the onion mixture.
  6. Cover and let simmer for an additional 5 minutes to meld the flavors.
  7. Serve hot, garnished with fresh parsley.
