Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 4 medium potatoes (Yukon Gold or red, cut into wedges)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 lemon (juiced and zested)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine olive oil, minced garlic, rosemary, thyme, lemon juice, lemon zest, salt, and pepper to make the marinade.
  3. Place the chicken thighs in a large resealable plastic bag or a bowl, and pour the marinade over the chicken. Seal or cover, and let it marinate in the refrigerator for at least 30 minutes.
  4. While the chicken is marinating, prepare the potatoes and onions. In a large bowl, toss the potato wedges and sliced onions with olive oil, salt, and pepper.
  5. Spread the potatoes and onions evenly on a baking sheet. Bake in the preheated oven for 20 minutes.
  6. After 20 minutes, remove the baking sheet from the oven, and push the potatoes and onions to the sides to create space in the center.
  7. Add the marinated chicken thighs to the center of the baking sheet, skin side up. Return to the oven and bake for an additional 25-30 minutes, or until the chicken is cooked through and the skin is crispy.
