Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 1 head of garlic, cloves separated and peeled
  • 2 lemons, zested and juiced
  • 1/4 cup olive oil
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 onion, quartered
  • 1 cup chicken broth

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the olive oil, lemon juice, lemon zest, thyme, rosemary, salt, and pepper.
  3. Pat the chicken dry and rub the herb mixture all over the chicken, including under the skin for maximum flavor.
  4. Stuff the cavity of the chicken with the garlic cloves and quartered onion.
  5. Place the chicken in a roasting pan and pour the chicken broth around it.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  7. Let the chicken rest for 10-15 minutes before carving and serving.
