Ingredients:

  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh dill, chopped

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the russet potatoes into evenly sized fries.
  3. In a large bowl, toss the fries with olive oil, minced garlic, salt, pepper, and paprika until evenly coated.
  4. Spread the fries out in a single layer on a baking sheet lined with parchment paper.
  5. Bake for about 30-35 minutes, turning halfway through, until crispy and golden brown.
  6. While the fries are baking, prepare the herb aioli by mixing mayonnaise, lemon juice, Dijon mustard, dill, and parsley in a small bowl.
  7. Once fries are done, remove them from the oven and immediately sprinkle with grated parmesan cheese.
  8. Serve the garlic parmesan fries hot with the herb aioli on the side for dipping.
