Ingredients:

  • 4 boneless pork chops
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button mushrooms)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions:

  1. Season the pork chops generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the chops from the skillet and keep warm.
  3. In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are golden and the garlic is fragrant.
  4. Stir in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Reduce the heat to low and add the heavy cream, Dijon mustard, and thyme. Stir well and let the sauce simmer for 2-3 minutes until it thickens slightly.
  6. Return the pork chops to the skillet, coating them in the creamy mushroom sauce. Cook for an additional 2 minutes to heat through.
  7. Garnish with chopped parsley before serving.
