Ingredients:

  • 200 g spaghetti
  • 2 medium potatoes, peeled and diced
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. 1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. 2. In a frying pan, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.
