Ingredients:

  • 4 bone-in pork chops
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them for about 4-5 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the halved cherry tomatoes, chicken broth, balsamic vinegar, oregano, and thyme. Stir to combine.
  4. Return the seared pork chops to the skillet, nestling them into the sauce. Bring to a simmer.
  5. Cover and reduce the heat to low. Cook for 30-35 minutes, or until the pork is tender and cooked through.
  6. Taste and adjust seasoning with salt and pepper. Serve garnished with fresh basil.
