Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional)
  • 1 lemon, juiced and zested
  • 1 cup low-sodium chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a large pot or skillet, heat olive oil over medium heat.
  2. Add minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the pot and season with salt, pepper, and oregano. Cook for 3-4 minutes until the shrimp turns pink.
  4. Stir in the broccoli florets and pour in the chicken broth. Bring to a simmer and cover, cooking for another 5 minutes until the broccoli is tender.
  5. Remove from heat, stir in lemon juice and zest.
  6. Garnish with fresh parsley before serving.
