Ingredients:

  • 200g dark chocolate (70% cocoa)
  • 150g unsalted butter
  • 150g granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 100g all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon espresso powder
  • Zest of 1 orange
  • Pinch of salt

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a 9-inch round cake pan.
  2. In a double boiler, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the sugar and eggs. Whisk until the mixture is pale and fluffy.
  4. Add the melted chocolate mixture and vanilla extract to the egg mixture, stirring until well combined.
  5. Sift in the flour, cocoa powder, espresso powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fold in the orange zest to add a refreshing flavor.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve the cake dusted with powdered sugar or topped with a dollop of whipped cream for an extra indulgence.
