Ingredients:

  • 1 lb ground beef (or pork)
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 tsp chili flakes
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 cups vegetable stock
  • 8 oz pasta (spaghetti or linguine)
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground meat, minced garlic, grated ginger, chili flakes, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
  5. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  6. In a large skillet, heat olive oil over medium heat. Add the cooked pasta and toss with vegetable stock, adding reserved pasta water as needed to create a light sauce.
  7. Add the baked meatballs to the skillet and gently toss to combine, allowing the flavors to meld for a couple of minutes.
  8. Serve hot, garnished with fresh parsley.
