Ingredients:

  • 1 inch fresh ginger, peeled and sliced
  • 1/2 cup freshly squeezed lemon juice
  • 2 cups water
  • 2 tablespoons honey or agave syrup (optional)
  • Fresh mint leaves for garnish
  • Ice cubes

Instructions:

  1. In a small saucepan, bring 1 cup of water to a boil. Add the sliced ginger and simmer for about 10 minutes to create a ginger infusion.
  2. Remove from heat and let it cool. Strain the ginger infusion into a pitcher, discarding the ginger slices.
  3. Add the freshly squeezed lemon juice and the remaining 1 cup of water to the pitcher. Stir well.
