Ingredients:

  • 4 chicken breasts
  • 2 tablespoons fresh ginger, grated
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the grated ginger, chopped mint, honey, soy sauce, olive oil, salt, and pepper to create the glaze.
  3. Place the chicken breasts in a baking dish and pour the ginger-mint glaze over them, ensuring they are well coated.
  4. Bake the chicken in the preheated oven for about 25-30 minutes, or until cooked through and juices run clear.
  5. While the chicken is baking, rinse the quinoa under cold water. In a saucepan, combine the quinoa and vegetable broth, and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  7. Once the quinoa is cooked, stir in the orange and lemon zest and juice. Season with salt and pepper to taste.
  8. Serve the glazed chicken over a bed of citrus quinoa and garnish with fresh mint leaves.
