Ingredients:

  • 2 chicken breasts, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 shallots, thinly sliced
  • 1 capsicum (bell pepper), sliced
  • 1 large carrot, julienned
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions:

  1. In a bowl, combine soy sauce, grated ginger, sliced shallots, salt, and pepper. Add the sliced chicken breasts and marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated chicken to the skillet, cooking until it is browned and cooked through, about 5-7 minutes.
  4. Add the sliced capsicum and julienned carrot to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
  5. Remove from heat and garnish with sesame seeds and chopped green onions if desired.
