Ingredients:

  • 2 chicken breasts, thinly sliced
  • 1 cup green beans, trimmed
  • 1 carrot, julienned
  • 1 red capsicum, sliced
  • 2 shallots, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes.
  3. Add the grated ginger and sliced shallots, stirring for an additional 2 minutes until fragrant.
  4. Add the julienned carrot, sliced capsicum, and green beans to the pan, and stir-fry for about 3-4 minutes, until the vegetables are tender-crisp.
  5. Pour in the soy sauce and toss everything together, cooking for another 2 minutes.
  6. Season with salt and pepper to taste before removing from heat.
