Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1/4 cup soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 shallots, thinly sliced
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 1 tablespoon chopped green onions (for garnish)

Instructions:

  1. In a bowl, mix soy sauce, grated ginger, honey, and sesame oil to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Heat vegetable oil in a large skillet over medium heat. Add the shallots and sauté until they are translucent and slightly caramelized, about 3-4 minutes.
  4. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Sear the chicken for about 5 minutes on each side, or until cooked through.
  5. Add the sliced capsicum to the skillet and pour in the reserved marinade. Cook for an additional 3-4 minutes, until the capsicum is tender but still crisp.
  6. Season with salt and pepper to taste. Garnish with chopped green onions before serving.
