Ingredients:

  • 500g minced beef or lamb
  • 2 large carrots, diced
  • 2 large tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • 1 cup vegetable broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced carrots to the skillet and cook for about 5 minutes until they start to soften.
  4. Stir in the minced meat, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  5. Add the chopped tomatoes, dried oregano, paprika, salt, and pepper. Stir well to combine.
  6. Pour in the vegetable broth and let the mixture simmer for about 10 minutes until slightly thickened.
  7. Transfer the mixture to a baking dish and spread it evenly.
  8. Bake in the preheated oven for 25-30 minutes until the top is slightly golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley. Serve warm.
