Ingredients:

  • 2 chicken breasts
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions:

  1. In a bowl, mix gochujang, soy sauce, honey, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Place the chicken breasts in the marinade, coating them well. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator for deeper flavor.
  3. Heat a skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest.
  4. In the same skillet, add the bell pepper, carrot, and broccoli. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.
  5. Add the reserved marinade to the skillet and simmer for 2-3 minutes. Return the chicken to the skillet, coating it with the sauce.
  6. Slice the chicken and serve it over cooked rice, topped with chopped green onions.
