Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1/2 cup chopped walnuts
  • Additional honey for drizzling
  • Fresh fruit for serving (optional)

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, combine the Greek yogurt, milk, eggs, honey, vanilla extract, and melted butter. Mix until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. Fold in the chopped walnuts gently.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary.
  8. Serve warm, drizzled with additional honey and topped with fresh fruit if desired.
