Ingredients:

  • 2 cups shredded cooked chicken
  • 1 package (8 oz) cream cheese, softened
  • 1 can (8 oz) refrigerated biscuit dough
  • 1 cup diced green chiles (canned or fresh)
  • 1 cup Mexican cheese blend, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the shredded chicken, cream cheese, diced green chiles, garlic powder, onion powder, cumin, and half of the Mexican cheese blend. Season with salt and pepper to taste.
  3. Roll out the biscuit dough on a floured surface and cut it into quarters. Place half of the dough pieces in a greased 9x13 inch baking dish.
  4. Spread the chicken and cheese mixture evenly over the biscuit dough in the baking dish.
  5. Top with the remaining biscuit dough pieces, layering them over the chicken mixture.
  6. Sprinkle the remaining Mexican cheese blend on top.
  7. Bake in the preheated oven for 25-30 minutes or until the biscuit dough is golden brown and cooked through.
  8. Let cool for a few minutes, then garnish with fresh cilantro if desired before serving.
