Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 cup Hatch green chiles, diced
  • 1 cup green enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 corn or flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, diced Hatch green chiles, cumin, garlic powder, salt, and pepper.
  3. Spread a small amount of green enchilada sauce on the bottom of a baking dish to prevent sticking.
  4. Take a tortilla, spoon some of the chicken mixture onto it, and roll it up tightly. Place the rolled tortilla seam-side down in the baking dish.
  5. Repeat this process for all tortillas until the dish is filled.
  6. Pour the remaining green enchilada sauce over the top of the rolled tortillas, ensuring they are well covered.
  7. Spread the sour cream evenly over the enchiladas, followed by the shredded cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  10. Garnish with fresh cilantro if desired, and serve hot.
