Ingredients:

  • 2 chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 large cucumber, diced
  • 2 medium tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.
