Ingredients:

  • 2 ripe peaches, halved and pitted
  • 8 oz burrata cheese
  • 4 cups arugula or mixed greens
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat the grill to medium heat.
  2. Brush the cut sides of the peaches with olive oil.
  3. Place the peaches cut-side down on the grill and cook for about 3-4 minutes until grill marks appear and they are slightly softened.
  4. In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Cook until reduced by half and thickened, about 8-10 minutes. Remove from heat and let cool.
  5. On a large platter, arrange the arugula or mixed greens. Tear the burrata cheese and place it in the center.
  6. Arrange the grilled peaches around the burrata.
  7. Drizzle the balsamic reduction and olive oil over the salad. Season with salt and pepper.
  8. Garnish with fresh basil leaves before serving.
