Ingredients:

  • 1 lb ground beef
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.
  4. Stir in the diced tomatoes, cannellini beans, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer.
  5. Reduce the heat to low and let it cook for about 10 minutes, allowing the flavors to meld together.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
