Ingredients:

  • 8 oz pasta (your choice, such as penne or fusilli)
  • 1 lb ground turkey
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the ground turkey, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  5. Mix in the sun-dried tomatoes, spinach, oregano, basil, red pepper flakes, salt, and pepper. Cook until the spinach is wilted, about 2-3 minutes.
  6. Add the cooked pasta to the skillet and toss everything together. Squeeze lemon juice over the mixture and stir to combine.
  7. Serve hot, topped with grated Parmesan cheese if desired.
