Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix the softened butter with minced garlic, parsley, thyme, salt, and pepper to create the herb butter.
  3. Using a sharp knife, make a pocket in each chicken breast by slicing them horizontally without cutting all the way through.
  4. Stuff each pocket with a slice of ham and a slice of Swiss cheese.
  5. Secure the openings with toothpicks if necessary.
  6. In a shallow dish, combine breadcrumbs and Parmesan cheese. Coat each stuffed chicken breast in the breadcrumb mixture.
  7. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts on both sides until golden brown, about 3-4 minutes per side.
  8. Top each chicken breast with a dollop of herb butter and transfer the skillet to the preheated oven.
  9. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
  10. Remove from the oven, let rest for a few minutes, and serve.
