Ingredients:

  • 1 cup egg whites
  • 1 1/2 cups whole oats
  • 1 cup organic blueberries
  • 1/4 cup no sugar added blueberry jam
  • 2 tablespoons organic cane sugar
  • 1/2 cup skim milk
  • 1 teaspoon pure vanilla extract
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease with coconut oil.
  2. In a large mixing bowl, combine the whole oats, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg whites, skim milk, melted coconut oil, organic cane sugar, blueberry jam, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the organic blueberries.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
