Ingredients:

  • 1 cup whole oats
  • 1 cup organic blueberries
  • 1/2 cup no sugar added blueberry jam
  • 3 egg whites
  • 1/2 cup skim milk
  • 1 tsp pure vanilla extract
  • 1/4 cup organic cane sugar
  • 1/4 cup coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with coconut oil.
  2. In a large bowl, combine the whole oats, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg whites, skim milk, melted coconut oil, organic cane sugar, and pure vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the organic blueberries and half of the no sugar added blueberry jam.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Top each muffin with a small dollop of the remaining blueberry jam.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
