Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 2 cups of low-fat milk or a dairy-free alternative
  • 1 cup of grated sharp cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of whole grain breadcrumbs
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of Dijon mustard
  • 1/2 teaspoon of nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower florets for about 5-7 minutes until tender but still firm. Drain and set aside.
  3. In a saucepan over medium heat, combine the low-fat milk, minced garlic, Dijon mustard, nutmeg, salt, and pepper. Heat until just simmering.
  4. Gradually whisk in the cheddar and Parmesan cheeses until melted and smooth. Remove from heat.
  5. In a baking dish, combine the steamed cauliflower florets with the cheese sauce, ensuring the cauliflower is well-coated.
  6. In a small bowl, mix the whole grain breadcrumbs with olive oil and a pinch of salt. Sprinkle this mixture over the top of the cauliflower cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  8. Remove from the oven, allow to cool slightly, and garnish with fresh parsley if desired. Serve warm.
