Ingredients:

  • 1 lb beef tips, trimmed and cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup low-sodium beef broth
  • 1/2 cup dry red wine
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add beef tips and season with salt and pepper. Sear until browned on all sides, about 5-7 minutes. Remove beef from skillet and set aside.
  2. In the same skillet, add onions and garlic. Sauté until softened, about 3-4 minutes.
  3. Add sliced mushrooms to the skillet and cook until they release their moisture and begin to brown, about 5 minutes.
  4. Pour in the red wine, scraping the bottom of the skillet to deglaze. Allow the wine to simmer for 2-3 minutes.
  5. Stir in the beef broth, Worcestershire sauce, thyme, and rosemary. Bring to a gentle simmer.
  6. Return the beef tips to the skillet, cover, and reduce heat to low. Let it simmer for 15-20 minutes, or until the beef is tender.
  7. Adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley.
