Ingredients:

  • 1 pound beef tips, trimmed and cut into bite-sized pieces
  • 2 cups mushrooms, sliced (such as cremini or button)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Salt and pepper to taste (optional, use sparingly for low sodium)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat. Add the beef tips and sear until browned on all sides. Remove from skillet and set aside.
  2. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent and fragrant.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown.
  4. Return the beef tips to the skillet. Pour in the low-sodium beef broth and add the dried thyme and rosemary. Stir to combine.
  5. Bring the mixture to a simmer, cover, and let cook for about 15-20 minutes, or until the beef is tender.
  6. Mix the cornstarch with water to create a slurry. Slowly stir it into the skillet to thicken the gravy. Cook for an additional 2-3 minutes until the gravy reaches your desired consistency.
  7. Season with salt and pepper to taste if desired. Garnish with fresh parsley before serving.
